Vegetable Soup
Cut in cubes the following: 1 onion, 3 carrots, 1/2 c. turnip, 2 branches of celery, 2/3 c. cauli flower and 1/4 c. red peppers.
Add 4 c. of water, then cool until vegetables are half-way done.
Add 2 c. tomato juice and 1 c. fines herbes.
Cook until the vegetables are tender.
Quick Potage
Wash and cook 1 brocoli and 1 small cauli flower.
When cooked, well… make them into a purée.
Add 1/4 c. of cream and some salt (Herbamare de préférance)
Mix well and serve.
Oh, soupoudre de persil too. It looks nice.
Veggie Crêpes
In a bowl, whisk 2 eggs and then add 1 c. of whole wheat flour, 1 tsp baking powder, 1/2 tsp salt and 1 c. of milk. MIx well, then cook, thin and big.
Then cook: some brocoli, cauli flower, onions. When your veggies are cooked, take off the fire and add some lemon juice and 1/4 Tbs of thyme.
Grate a carrot.
Put a crêpe in a plate, then “butter” some real mayo, place carrots, onions and all other veggies. Roll the crêpe and enjoy.
Rooibos Punch
1. Get some water boiling and make yourself a cup of Rooibos herbal tea.
2. Fill a glass with ice and pour your herbal tea in it.
3. Add the juice of half an orange (or well, if you’re lazy or don’t have oranges, use orange juice…) in your glass.
4. Add a tsp of sugar if you feel like it needs it (mine always does!).
5. Enjoy.
