Icing (Cream Cheese!)

That’ll make about two cups of icing… if you double it’ll be just a little less than a 900 grams margarine container (this is quite a lot).

Blend together: 1 package (about 8 ounces / 250 g) of cream cheese + 1/4 c. butter + 1 c. of icing sugar + 1 tsp of vanilla extract.

Honey Substitute

If you find yourself with a chicken to cook and it’s labour day, so the grocery store is closed and you desire to make honey garlic chicken… but have no honey (or money), what do you do? At first I thought I’d just “omit” the honey in the recipe. But my roomate opened her grandma’s recipe book to find a substitute for honey. Here’s the recipe to make 1 c. of “honey”:

1 1/4 c. sugar + 1/4 c. water (well, it said “liquid”). Mix them up and you’ve got “honey”.

It for sure doesn’t taste like it, but it does the job on honey garlic chicken!

Sweet & Sour Sauce (100)

16 T. cornstarch

8 c. brown sugar

8c. water

4 c. vinegar

4 c. ketchup

Combine and simmer 3-5 minutes

Chocolate Sauce

6 c. sugar

1 ¾ c. cornstarch

2 tsp salt

2 2/3 c. cocoa

4 c. cold water

Mix all ingredients, add water gradually to form smooth paste

 

14 c. boiling water

(add water slowly while stirring)

 

Boil 5 min. Add 3 c. marg. stir to blend.

Condensed Milk

1 c. skim milk powder

3 T. marg.

1/3 c. sugar

1/3 c. boiling water

 

In bowl combine milk powder with sugar. Stir into boiling water until melted. Pour into sugar mixture. Beat about 2 min. or till smooth and creamy.

Refrigerate 8 hours.

Baked Oatmeal (2-9×13)

8 beaten eggs

4 c. brown sugar

2 c. oil

4 c. milk

Add:

12 c. oatmeal

8 tsp baking powder

2 tsp salt

 

Bake at 350 for 30 min

Apple Fritters (100)

16 c. flour

½ c, baking powder

2 T. sugar

12 beaten eggs

¾ c. marg.

1 T. saltMix dry ingredients

2 ½ qt. milk

 

Combine eggs, milk and fat.

Add to dry ingredient.

Mix only enough to moisten dry ingredients.

Apple fritters – add 8 lb. of raw apple finely chopped

Fry in hot deep fat (oil)

Crunchy Granola

Mix:

2 c. coconut

12 c. sunflower seed

3 c. of peanut and walnut mixed

Bring to boil:

3 c. honey or brown sugar

1 ½ c. oil

3 tsp. cinnamon

Pour over ingredient and mix.

Spread on cookie sheets

Bake at 325 for 20 min.

Stir and watch closely.

Cool and put in sealers.
